Good food, good wine and fresh country air – is there anything better? Enjoy all three at Rathfinny’s Tasting Room in Sussex, where Martin Carabott will be hosting the first guest chef takeover weekend this April. Currently Senior Sous Chef at Michelin-starred Hide restaurant in London, Martin has also spent time working at New York’s acclaimed Eleven Madison Park, which was named Best Restaurant in the World in 2017. In 2018, Martin was crowned winner of the Roux Scholarship, a competition judged by top chefs Alain Roux, Andrew Fairlie, James Martin and Simon Hulstone.
Located within the Rathfinny Wine Estate in Sussex, Rathfinny’s Tasting Room is a beautiful spot which overlooks the vineyard and picturesque South Downs. It’s headed up by Chris Bailey, with a seasonal, ever-changing menu of modern British cuisine. As guest chef, Martin will be cooking up a selection of contemporary European dishes, such as spring peas and marigold agnolotti, slow cooked trout, and Herdwick lamb cooked over embers.
Rathfinny Estate was founded in 2010, and specialises in sparkling wines. As well as the restaurant, they offer wine tastings and tours of the estate, where you’ll learn how a typical year of growing vines and wine production progresses.
