Eco-chef Skye Gyngell is using up all the leftover produce from her Somerset House restaurant, Spring, with a special anti-waste menu, Scratch. It has become a much-loved tradition at the restaurant over the years, and fits in perfectly with Skye’s environmental ethos. Exact menu details won’t be revealed until the day – as it’s based on which ingredients have been overlooked – but past dishes have included roasted Jerusalem artichoke soup, pasta off-cuts reinvented into tortellini and yesterday’s bread made into a warm bread pudding. 18 December, £25 for three courses. springrestaurant.co.uk

Anniversary Menu at Henrock

To celebrate 20 years of Simon Rogan’s restaurant group, a special menu is coming to Henrock in Linthwaite House Hotel. Available for two weeks in January, the menu will allow guests to choose from a selection of starters, mains and desserts that have appeared on Simon’s menus since 2002.
