Recipe: Mulled Pears

Ingredients

  • 1 Bottle of robust red wine
  • 500ml water
  • 200ml Orange Juice
  • 125g Caster Sugar
  • 2 Cinnamon Sticks
  • 6 Cloves
  • 2 Star Anise
  • 2 Chunks Stem Ginger
  • Zest of 1 Unwaxed Lemon
  • 6 Firm Pears

Directions

  1. Put all the ingredients expect the pears into a heavy bottom saucepan and bring to the boil – simmer for 10 minutes
  2. Peel and cut the bottoms off the pears (allowing them to stand upright)
  3. Add the pears and bring back to a gentle simmer
  4. Poach for around 30 mins – until soft, turning occasionally
  5. Remove the pears, strain the poaching liquid and add back to the heat to reduce by half until syrupy
  6. To serve, sit the pears upright and cover with the poaching syrup
